Banana Cream Supreme/Pampered Chef


16 graham cracker squares (approximately 1 1/4 cups crushed)
1/4 cup butter or margarine, melted
3 tablespoons sugar
1 container (12 oz) frozen whipped topping, thawed
1 container (8 oz) sour cream
1 package (3.4 oz) vanilla instant pudding and pie filling
3 medium bananas, sliced
2 tablespoons pecan halves, grated
strawberry fans (optional)

  1. Finely crush graham crackers in large resealable plastic food storage bag; place in Small Batter Bowl. Add butter and sugar; mix well. Press crumb mixture onto bottom of Springform Pan.
  2. In Classic Batter Bowl, whisk whipped topping and sour cream until blended. Add pudding mix; whisk until mixture is well blended and smooth. Spread half of the filling over crust. Slice bananas using Egg Slicer Plus; arrange over filling. Spread remaining filling over bananas.
  3. Grate pecans over top using Deluxe cheese grater. Refrigerate at least 30 minutes.
  4. Run Quikut Paring knife around sides of dessert; release collar from pan and carefully remove. Cut into wedges. Garnish each serving with a strawberry fan, if desired.

Yield: 12 servings

Cheesy Chicken Qhilaquiles/Pampered Chef

1 1/2 lb boneless, skinless chicken breasts
1 tbsp Southwestern Seasoning Mix
1 3/4 cups salsa verde
1 cup 33% reduced-sodium chicken broth
3/4 cup chopped fresh cilantro
12 cups authentic restaurant-style tortilla chips
2 cups shredded Chihuahua cheese
1 cup crumbled queso fresco
sour cream (optional)

  1. Cook Chicken. Cut chicken into 1-in pieces with utility knife. Combine chicken and seasoning mix in Deep Covered Baker; mix well. Spread chicken evenly over bottom of baker. Microwave, covered, on High 4 minutes; stir to separate chicken. Microwave, covered, an additional 4 minutes or until chicken is no longer pink. Drain using small colander.
  2. Layer chilaquiles. Combine salsa and broth in Easy Read Measuring Cup. Chop cilantro using Santoku knife. Arrange half of the tortilla chips over bottom of same baker, breaking chips; top with half each of the chicken, salsa mixture and cheeses. Sprinkle with 1.2 cup of the cilantro. Repeat layers one time, ending with cheeses.
  3. Microwave and serve. Microwave, covered, on High 5-7 minutes or until cheeses are melted and most of the liquid is absorbed. Let stand, covered, 5 minutes. Sprinkle with remaining 1/4 cup cilantro. Serve with sour cream, if desired.
Yield: 8 servings

Work, Umbrellas, McDonald's and the Girls

Josie is still coming with me to work on Thursday mornings. I love these mornings cause it's the only time I have that I sit with her and do what she wants for the most part cause I'm not at home staring at everything that has to be done.
This particular morning, even though it was sunny and warm out, she claimed it was raining and we had to have the umbrella out. She kept trying to go inside with it, but this superstitious Mommy kept telling her she had to come back outside. 
 When it's lunchtime, we go pick Kayla up at school and then the girls get to choose where we eat lunch at. Of course about every week it's McDonald's and I always have to get them cookies to eat too. We had our picnic out on the front porch at work. They then went to play on the gravel pile for a while and got hot. So then we had to go inside and eat our cookies. I think Kayla wore more of hers than she ate of it!

I was thinking of how special it would be to do a mini-session this spring for the Mother’s out there. I am always the one behind the camera so I know how special and rare THE photo of Mom with a Child can be.
How many million photos do you have of your husband playing with the kids and how many do you have of you?
This special photo of you and your child at this time in your lives will become such a treasured memory for your child in his/her adulthood. They will see how much you loved them and there is NOTHING more precious than that.
Really, the sweetest thing you have is that special connection between you and your child. Remember it! Photos are not only the perfect gift to you this Mother’s Day, but for your own mother and mother-in-law as well.

These Mommy & Me sessions will be held on Friday, April 22nd and Saturday, April 23rd from 5:30 to 8:00pm at Star of Indiana property on Simpson Chapel Rd.
